What Is HACCP?

Originally developed by Pillsbury, a major foodstuffs company of U.S.A., to ensure the safety of space food for the Apollo program of the 1960s, HACCP is space-age technology applied to the enhancement of food safety management.

Traditionally, food safety inspection depended on random sampling of final products. HACCP, however, is a system of safety management throughout the entire process of food production from raw material to processing, packaging, distribution, and consumption.

CODEX, a food safety committee jointly created by FAO and WHO of the United Nations, has issued guidelines on food safety, recommending HACCP program to its Member States.
